There are many methods to making a great omelette. However, this method is both simple and efficient. If you’re a fan of adding lots of fillings to your omelette- ham, onions, peppers or tomatoes for example- make sure these are cooked and caramelized ahead of making the omelette. Using a lightly oiled heavy-bottomed frying pan, add a bit of butter and only when it begins to foam do you add the eggs. Stir the eggs constantly to beat in some air and tilt the pan from side to side allowing any uncooked egg to run off to the sides. Once the top is almost set but still moist and creamy, lift the edges to see if there’s any color on the bottom and then turn off the heat.
